Risotto in 2 ways - 2 razy risotto

Hi guys!

I promised you something salty this week, so there goes tomato risotto and mushrooms one. The tomato is my #1 for supper because I love tomato sauces. I can eat the whole portion by myself (please don't judge). Although it's made of 1 bag of rice, it's very filling. The mushrooms risotto is my mum's "fantasy". But maybe from the beginning - risotto is rice boiled not in the water but in broth. It's a bit time consuming, but it's worth it and you should definitely try it.




Ingredients:
(for the rice base, 2-4 servings)

1 bag of arborio rice (200g) or white 
about 1 liter warm stock (you can use less and add hot water or use stock cube, but don't use only water, because it'll spoil the taste)
1 tablespoon butter
salt and pepper
parmesan cheese
4 slices of cheese



Preparation:

1) Spill the rice out of the bag into a medium pot. Add part of the broth into the pot and boil on medium heat; stir from time to time and watch it. After drying off, add more broth and repeat until the rice is cooked and all the liquid evaporated.  

2) Add 1 tablespoon of butter, salt and pepper, grate both cheeses.



Tomato risotto:

In the meantime (while doing the rice) prepare the sauce. Add it as a point 3 to the pot and cook a little for the excess of water to give off steam. You can decorate it with fresh basil leaves and grated parmesan. 

OR

Mushrooms risotto: 

In the meantime (while doing the rice) fry up 1 sliced onion and 2 garlic cloves on butter and add about half of a bowl of peeled, chopped champignon mushrooms (or any other you like). Flavour with salt and pepper and add as a point 3 to the rice. 


I recommend serving it in a small bowls or deep plaits.

Witam wszystkich!

Obiecałam coś na słono, więc w tym tygodniu oferuję pomidorowe oraz grzybowe risotto. Pomidorowe jest moim #1 jeśli chodzi o kolacje, ponieważ mam słabość do sosów z tychże warzyw. Potrafię zjeść całe samemu (proszę nie oceniać). Mimo że jest zrobione tylko z 1 woreczka ryżu, jest dość sycące. Pieczarkowe risotto to "fantazja" mojej mamy. Zacznijmy od początku - risotto to ryż gotowany nie na wodzie, ale na bulionie (rosole). Wymaga trochę czasu, ale definitywnie jest tego warte, a wy powinniście go spróbować. 



Składniki:(na ryżową bazę, 2-4 podań)


1 woreczek ryżu arborio (200g) lub białego
około 1 litra ciepłego bulionu (można użyć mniej i dolać ciepłej wody lub użyć kostki rosołowej, ale nie zastępować całego wodą, bo wtedy całość straci smak)
1 łyżka masła
sól i pieprz
ser parmezan
4 plastry żółtego sera



Przygotowanie: 

1) Ryż wysypać z woreczka do średniego garnka. Dodać część bulionu i gotować na średnim ogniu; od czasu do czasu wymieszać i doglądać. Gdy odparuje, dodać więcej bulionu i powtarzać, aż ryż będzie ugotowany, a płyn odparuje. 

2) Dodać 1 łyżkę masła, sól, pieprz, zetrzeć oba sery. 



Risotto pomidorowe:

W międzyczasie (podczas gotowania ryżu) przygotować sos. Dodać go jako punkt 3. do garnka i gotować przez chwilę, aby nadmiar wody odparował. Można udekorować je świeżą bazylią i startym parmezanem. 

LUB

Grzybowe risotto:

W międzyczasie (podczas gotowania ryżu) podsmażyć na maśle 1 posiekaną cebulę, 2 ząbki czosnku oraz około pół miski obranych, posiekanych pieczarek (lub innych grzybów, na które macie ochotę). Doprawić solą, pieprzem i dodać jako punkt 3. do ryżu.


Sugeruję podawanie w małych miseczkach lub głębokich talerzach.
