Unforgettable carrot cake - niezapomniane ciasto marchewkowe

Hello!

Most of my friends are crazy about having carrot cake if it comes to fall and winter, that just go together. So here I come with a recipe for a carrot cake with cinnamon and nuts.



Ingredients:
in room temperature

two-thirds of a cup of wheat flour
half of a cup of brown sugar
2 teaspoons of baking powder
1-2 teaspoon(s) of gingerbread spice*
pinch of salt
one-third of a cup of oil (ex. canola)
2 eggs
1 cup of walnuts
half of a cup of pineapples
500 grams of carrots

*mine is a combination of cinnamon, cloves, nutmeg, pimento, anise, cardamon, ginger, mint, black pepper



Preparation:

1) Peel the carrots. Grate them into medium size or cut them into small pieces. Cut the walnuts into medium size. Peel and slice the pineapple or get it out of the can; cut into little pieces and drain the majority of its juice.

2) Put flour, sugar, salt, baking powder and spice into one bowl. 

3) In other one mix eggs and oil.

4) Combine all the ingredients in a bigger bowl, add carrots, nuts, pineapples pieces and unite. The dough should be thick. 

5) Lay the baking paper on the form and spill the cake, put it in the oven:

temperature: 175'C
time: about 40 minutes (you can always check with the toothpick whether it's ok)

Now you can wait until it cools and serve with or without cream:



Recipe for the Philadelphia cream:


You need 250 grams of philadelphia cheese, 80 grams of unsalted butter, 1 cup of powdered sugar, vanilla pod/savour/etc. (all in room temperature)


Blend the butter, sugar and vanilla until fluffy. Then add cheese, but in small portions, still mixing. 


You can either cut the cake horizontal and put the cream between or just add it on the top (make sure the cake is no longer warm).


At the very end you can decorate the top with walnuts and cinnamon.

Jako, że nastał czas jesienno-zimowy, moi znajomi nalegają na ciasto marchewkowe, które idealnie się komponuje z tymi porami roku i całą atmosferą. Z tej okazji przygotowałam przepis na ciasto marchewkowe z cynamonem i orzechami.


Składniki:
w temperaturze pokojowej

dwie trzecie szklanki mąki pszennej
pół szklanki brązowego cukru
2 łyżeczki proszku do pieczenia
1-2 łyżeczki przyprawy do piernika*
szczypta soli
jedna trzecia szklanki oleju (np. rzepakowego)
2 jajka
1 szklanka orzechów włoskich
pół szklanki ananasa
500 gramów marchewki


*moja zawiera cynamon, goździki, gałkę muszkatołową, ziele angielskie, anyż, kardamon, imbir, mięte, pieprz czarny


Przygotowanie:

1) Obrać marchewki, zetrzeć je na tarce o średnich oczkach lub pokroić w drobne części. Grubo posiekać orzechy. Obrać i pokroić część ananasa lub wyjąć go z puszki; pociąć go w małe paski i odsączyć większość soku. 

2) Mąkę, cukier, sól, proszek do pieczenia i przyprawę wymieszać w jednej misce. 

3) W drugiej zmiksować jajka z olejem. 

4) Połączyć wszystkie składniki w większej misce, dodać marchewkę, orzechy, ananasa. Ciasto ma być gęste. 

5) Blaszkę wyłożyć papierem do pieczenia i włożyć do piekarnika:

temperatura: 175'C
czas: około 40 minut (można sprawdzić suchość patyczka)

Teraz poczekać do ostygnięcia i podawać z kremem lub bez:


Przepis na krem z serka Philadelphia:

Potrzeba 250 gramów serka, 80 gramów masła, 1 szklanki cukru pudru, aromat waniliowy/laskę wanilli/cukier wanilinowy/etc. (wszystko w temperaturze pokojowej).

Utrzeć masło z cukrem i wanilią aż do uzyskania gładkiej konsystencji. Dodać serek małymi porcjami, ciągle mieszając. 

Można przeciąć ciasto poziomo i przełożyć je kremem lub wyłożyć go na wierzchu (upewnij się, że ciasto już ostygło). 

Na koniec udekorować górę cynamonem i orzechami włoskimi.
